Crispy Baked Potato

Skins


5 Baked Potatoes, small
2 tbsp Unsalted Butter, melted
1/2 tsp Parlsey
1/4 tsp Seasoned Salt
1/4 tsp Garlic Powder
3 slices Cooked Bacon, finely chopped or 3 tbsp Bacon Bits
2 tbsp Chives or Green Onions
1 c Cheddar Cheese
Sour Cream, for serving
Preheat oven to 425 degrees. Combine butter, parsley, seasoned salt, and garlic powder in a small bowl. Set aside. Ensure baked potatoes are cooled. Cut potatoes in half, lengthwise. Using a small spoon, scoop out the flesh, leaving a 1/4-inch shell or more if you prefer. Brush both the inside and outside of the potatoes with butter mix. Place potatoes, cut side down, in a baking dish. Bake 15 minutes. Flip potatoes over and bake another 5 minutes or until slightly browned and crispy. Fill each potato with cheese and bacon. Return to oven for another 5-7 minutes or until cheese is melted and bubbly. Remove from oven and top with chives and sour cream.
